Cornbread
Nannies, Nita’s and Ginny’s cornbread
Preheat oven to 425 degrees
Put oil in a cast iron skillet and put the pan in the oven to heat up.
2 ½ cups corn meal
2 eggs
2 cups buttermilk
3 tablespoons oil
1 teaspoon salt
3 teaspoons baking powder
1 t of baking soda
1 t of cold water
Mix dry ingredients except for baking soda
Mix eggs, buttermilk, oil in separate bowl.
Combine cornmeal mix with buttermilk mix and stir well.
Mix soda with water and add to batter. Stir well.
Pour batter into hot skillet
Cook at 425 degrees for 20 minutes
Remove from pan.
